Steak Simplified is a book launching on 25 Oct 2024 written by Joan Tuaño Rumsey.

Gone are the days where meat is just meat. There are now so many ways of raising cattle and lots of discussion about their implications on our health and the environment. Angus and Wagyu beef have never been so popular as it is today, but Grass-fed beef still forms the foundation in so many countries' cattle industries. There is a lot of confusion about whether it's good for you, and how to cook it properly. Steak Simplified aims to clarify all this up!

what to expect

Before getting into the how, we need to step back and look at the bigger picture. i.e. the current arguments that exist on meat. Then we break down all the important elements that help one understand quality beef and lamb like feed, breeds, aging and marbling. Next, we look at how to cook meat using different techniques including a section on grills, airfryers and sous vide (vacuum) cooking. Finally, the recipes. They will each include a QR code link to a video on how to make each one, some highlighting Filipino dishes as an ode to the author's culture.

Joan wrote Steak Simplified as a love letter to her parents, Jovy and Janet Tuaño, as their family meat shop La Carne entered its 10th year. 100% proudly Filipina, she moved to Abu Dhabi, United Arab Emirates at the age of 5. She studied at Enderun Colleges and then Les Roches International School of Hotel Management in Switzerland, and traveled to Paris, St Thomas and the Turks and Caicos Islands for her career in hospitality. In 2016, she found her calling back to the UAE’s capital and put her family business online, becoming a pioneer in butchery e-commerce and the retail of Japanese Wagyu. She believes in the power of education to differentiate from big players in saturated markets and that slow business is better than big. She now serves as Chief Marketing Officer for La Carne Abu Dhabi and Cebu in the Philippines, which also has a Steak Bar.
